# Cooking tips:

01 -
  • It feels fancy but comes together faster than ordering delivery.
  • The fresh basil turns an ordinary grilled cheese into something you actually crave.
  • You can make it with whatever cheese or bread you have on hand and it still works.
  • That crispy buttery crust against warm melted mozzarella is unbeatable.
02 -
  • If your heat is too high, the bread will toast before the cheese melts, leaving you with a burnt outside and cold center.
  • Pat the tomato slices dry with a paper towel before layering them in, it keeps the sandwich from getting soggy.
  • Press the sandwich gently but firmly with the spatula while it cooks, it helps the cheese melt faster and the layers fuse together.
03 -
  • Use a cast iron skillet if you have one, it holds heat evenly and gives the bread an incredible crust.
  • Let the butter come to room temperature before spreading, it makes the job easier and ensures every inch of bread gets coverage.
  • If the cheese isn't melting fast enough, cover the skillet with a lid for the last minute of cooking.
