Juicy steak bites with garlic butter, crispy avocado fries, and fresh zucchini ribbons for a satisfying low-carb dish.

# What you’ll need:

→ Steak Bites

01 - 1.5 lbs sirloin steak, cut into 1-inch cubes
02 - 1 tsp sea salt
03 - 0.5 tsp black pepper
04 - 1 tbsp olive oil
05 - 2 tbsp unsalted butter
06 - 4 garlic cloves, minced
07 - 1 tbsp fresh parsley, chopped

→ Avocado Fries

08 - 2 large ripe avocados, sliced into 0.5-inch wedges
09 - 2 large eggs
10 - 1 cup almond flour
11 - 0.5 cup grated Parmesan cheese
12 - 0.5 tsp smoked paprika
13 - 0.5 tsp garlic powder
14 - 0.5 tsp sea salt
15 - 0.25 tsp black pepper
16 - Olive oil spray

→ Zucchini Ribbons

17 - 2 medium zucchinis
18 - 1 tbsp olive oil
19 - 1 tbsp fresh lemon juice
20 - Sea salt and black pepper to taste

# Steps:

01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - In a shallow bowl, beat eggs. In a separate bowl, combine almond flour, Parmesan cheese, smoked paprika, garlic powder, sea salt, and black pepper. Mix until evenly blended.
03 - Dip each avocado wedge into beaten egg, then coat thoroughly in almond flour mixture. Arrange coated wedges on prepared baking sheet in a single layer. Lightly spray with olive oil. Bake for 15 to 18 minutes, turning halfway through, until golden and crispy.
04 - Pat steak cubes dry with paper towels. Season generously with sea salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Add steak cubes in a single layer and sear for 1 to 2 minutes per side until browned but still pink inside. Remove steak and set aside on a plate.
05 - Reduce heat to medium. Add unsalted butter to the skillet and allow to melt. Stir in minced garlic and cook for 30 seconds until fragrant. Return seared steak bites to the skillet and toss gently to coat in garlic butter. Garnish with fresh chopped parsley.
06 - Using a vegetable peeler or spiralizer, shave zucchinis into thin ribbon strands. Toss ribbons with olive oil, fresh lemon juice, sea salt, and black pepper to taste.
07 - Arrange garlic butter steak bites in the center of each plate. Place crispy avocado fries and zucchini ribbons on the side. Serve immediately while steak is hot.

# Cooking tips:

01 -
  • The steak comes out impossibly tender and juicy, seared until it's got that golden crust but stays pink and perfect inside, which honestly feels like showing off without any real effort.
  • Avocado fries are the kind of dish that converts skeptics because they're crispy on the outside, creamy within, and taste nothing like deprivation.
  • Everything comes together in under 45 minutes, which means you can actually make this on a weeknight instead of just thinking about it.
  • It feels indulgent enough that you'll forget you're eating keto, which is kind of the whole point.
02 -
  • The avocados need to be ripe but still firm enough to slice without falling apart; if they're too soft, they'll turn into mush inside the coating even though the outside looks perfect.
  • Searing the steak over actual high heat for a short time is the difference between bites that are juicy and tender versus ones that are dried out, so resist the urge to move them around or lower the temperature.
  • Freshly grated Parmesan makes a real difference in the avocado coating because the pre-grated stuff has anticaking agents that prevent it from getting crispy and golden.
03 -
  • Buy your avocados a day or two before you plan to make this so they're perfectly ripe but still firm enough to slice and bread without falling apart.
  • Don't waste time on expensive steak cuts for this dish; sirloin at medium-high heat for a short time tastes just as tender as much pricier options.
  • Keep the skillet temperature high enough that you hear the steak sizzle the moment it hits the pan, which means you're getting a proper crust instead of steaming the meat.
