Chicken BBQ Pizza (Print version)

A savory pizza with grilled chicken, barbecue sauce, red onions, and melted cheese baked to golden perfection.

# What you’ll need:

→ Dough

01 - 1 prepared pizza dough (about 9–10.5 oz)

→ Sauce

02 - 1/2 cup barbecue sauce, plus extra for drizzling

→ Chicken

03 - 1 large grilled chicken breast, sliced (about 7 oz)

→ Vegetables

04 - 1/2 small red onion, thinly sliced

→ Cheese

05 - 1 1/2 cups shredded mozzarella cheese (about 5.3 oz)
06 - 1/2 cup shredded smoked gouda or cheddar cheese (about 1.75 oz)

→ Garnish

07 - 2 tablespoons chopped fresh cilantro (optional)

# Steps:

01 - Preheat oven to 450°F. Place pizza stone inside if available to heat.
02 - Roll or stretch pizza dough into a 12-inch round on a floured surface and transfer to parchment-lined baking sheet or pizza peel.
03 - Spread barbecue sauce evenly over dough, leaving a border around edges.
04 - Arrange sliced grilled chicken evenly over sauce.
05 - Sprinkle mozzarella and smoked gouda or cheddar cheeses over chicken.
06 - Scatter thinly sliced red onion over cheese.
07 - Bake in preheated oven for 12–15 minutes until crust is golden and cheese is bubbly and browned.
08 - Remove from oven, drizzle with extra barbecue sauce, sprinkle chopped cilantro if desired, slice, and serve hot.

# Cooking tips:

01 -
  • It comes together faster than ordering delivery, with most of the work done before the oven even heats up.
  • The tangy barbecue and smoky cheese create a flavor depth that tastes like you spent hours perfecting it.
  • You can prep everything in advance and bake when hunger strikes.
02 -
  • Make sure your chicken is actually grilled or at least cooked before it goes on the pizza—raw chicken hidden under melted cheese won't cook through in just 15 minutes.
  • Slice your red onions paper-thin or they'll remain tough; thinner slices soften and sweeten in the oven heat.
  • Don't skimp on the cheese or your pizza will taste dry; those cheeses are what make it sing.
03 -
  • Pre-shredded cheese melts unevenly—use a box grater and fresh cheese if you have even five minutes, because it browns more beautifully and tastes noticeably better.
  • If your dough feels too sticky to work with, dust your hands and work surface with flour rather than adding more flour to the dough itself—this keeps the crust tender.
